How to Make a Delish Shiner Bock Onion Tart

A couple of weeks ago I saw that HEB was having a sale on yellow onions so I went crazy and bought 6 lb of onions. Was this my proudest moment? Yes oh, I can firmly say I am extremely proud of this decision. I would have got more but I didn't know what to do with them. granted when I got home I was able to create an onion tart. now I know you've never really had one because they're not really that popular, everyone always wants a cherry tart or a peach tart, but the real ones know that onion Tarts are the way to go.

So, you're wondering why would I make an onion tart? I mean I was wondering the same thing as well but here's the catch you could have an onion tart with your dinner. I mean you can also have it alone but that's weird. I love making onion tart and eating it with a great steak. This recipe is so easy and it's perfect for dinner parties, New Year's Eve dinner, or when onions are on sale and you also want to buy 6 lb.

Ingredients for the Onion Pastry: 

  • 1 frozen puff pastry

  • 3 to 5 onions (it's all on how much onion you want really, I love using sweet onions, but any onion will do.)

  • 3 tablespoons of butter unsalted

  • 2 to 4 cloves of garlic

  • 1 tbsp of thyme

  • 16 oz of Shiner Bock beer  or a good dark beer

  • Half cup of white cheddar

  • Salt and pepper to taste.

Directions for the Onion Pastry

Take the puff pastry out, and lay it on your baking sheets so it can thaw while you prepare everything else.  heat up a pot on medium to melt butter and add sliced onions and garlic. When they get translucent turn it down to low and let them sweat for a little bit longer. When they're finally soft add thyme,  and half a pint of your beer. Leave it on low stirring occasionally. If the onion mixture starts looking a little dry- add a little more beer at a time. You're looking for the onions to be caramelized and sweet. This should take around 45 minutes to an hour.

Preheat the oven to 400°, now you are able to roll out the puff pastry on your cookie sheets, I suggest poking holes so that way the heat can escape and you don't get bubbles. Top the puff pastry with your onion mixture spreading almost to the edges. You should leave about half a centimeter between the mixture of the edge. At this point you can choose to top it with cheese and bake for around 35 minutes but no longer than 45 minutes basically or until the puff pastry is golden brown.
