There are very few wants in life and for me, one of those is a great salad. If you think about it- a great salad is about perfect balance. Too much dressing and the salad will just taste like that- too little dressing and the salad is well a plate of veggies. 

I personally adore a great Lyonnaise salad. It’s the perfect balance of heat, acid, and fat. So I should tell you a fancy story about why I like this salad too, in this blog, because I’ve been reading recipe blogs and they always give you a story. 

Mine is simple. I backpacked through Europe a while back and couldn’t afford to go to Paris. It was either Paris or Rome and being Catholic- I chose Rome. I still wanted the opportunity to visit France though- so Lyon came up. 

I met a girl, Ivanka, in my hostel who introduced me to her friend, Roos, who was working in the city and the three of us explored and when it came to lunch. Roos suggested a small cafe and then suggested this salad and then I loved it. In the past, I’d never really been satisfied with just a salad- but this one was different. It was full of flavor and really filling maybe it’s because it was a warm salad versus the cold ones I’ve been used to.  

The version I tried had lardon but I understand that’s really hard to find unless you go to a specialty butcher shop. So instead I’ve just made mine with thick-cut bacon. It definitely is an Americanized version of the plate but none the less it’s still delicious.
